  • Balance cannot be achieved with store-bought gluten-free cookies, but with colorful vegetables, whole grains, and healthy fats.
  • Your body doesn't long to be "free from" — it doesn't even know that word — it longs to be truly nourished!
A gluten-free diet is not a trend, for many, it's a vital lifestyle change. But what are the real effects of eliminating gluten? And is there a difference between celiac disease and gluten sensitivity?

Celiac disease, when gluten truly harms your body.

Celiac disease is an autoimmune disorder in which the body identifies gluten as an enemy and attacks the intestinal villi. Over time, this leads to serious absorption problems.

Positive changes with gluten-free diet, here's what to look forward to: 

  • Digestive issues disappear ((bloating, diarrhea, pain). 
  • Improved blood count, iron, and vitamin levels — don't be surprised if your body finally starts absorbing nutrients after all those supplements!

  • Social meals can become complicated. You might find gatherings a bit difficult — at least in the beginning. 
  • Risk of cross-contamination (even crumbs can cause trouble).
  • Possible nutrient deficiencies if your diet becomes too monotonous. 

And what if you are "only" gluten sensitive? 

Non-celiac gluten sensitivity (NCGS) is not an autoimmune disease, but it can still cause unpleasant symptoms. Importantly, it doesn't damage the intestines — but it can significantly affect your quality of life.
